Method

  1. Dry roast jawitri, coriender seeds, blackpeper, cininom stick for five minutes on low flame and than grind .
  2. now heat oil in a pan and fry some cumin seeds, red chilli flakes and bay leaf and then add thick sliced onion till light brown.
  3. Add sgarlic and ginger fried chick pea and popi seed paste and roast till light brown.
  4. Then add mutton, salt to taste and fry it for 5-10 min tnen add all spices and then again put on flame for another 10 minutes and cover the pan.
  5. Add water and freshely choped coriender and leave it for another 20 minutes with covered pan on low flam.
  6. Add water to get desire consistancy and leave on flame for another 10 minutes
  7. Mutton masala is ready

Palak Paneer

Method

  1. Wash fresh leaves of spinich(palak) and blanch in hot water 1/2 tsp of salt and sugar to maintain its bright colour.
  2. After five minutes drain the hot water and put palak in ice cold wter and drain and then griend.
  3. Take oil in a pan and fry cumin seeds than add chopped garlic and cook for five minutes then add chopped onion.
  4. Ssaute onion untill lumpi and pinkish(translucent).
  5. Blend this mixture with palak coriender and green cillies.
  6. Fry spices and add this blended mixture to spices and then add yogurt or cream and cook for 3-5 minutes
  7. Add chees cubes and lemon juice and cook for 2-3 minutes.
  8. Chees cubes can be fried before adding to the puree(optional)
  9. Serve hot.

Method

  1. Grind green chillies, fresh coriender, fresh mint.
  2. Chop onion and shallow fry till golden brown.
  3. Add ginger garlic paste spices, brown crushed onion and green paste in mince and mix it in the chopper for 2-3 min.
  4. Put aside for 1 hour.
  5. In the mean time Heat Bar B Que grill with coals with skewers
  6. Take a big ball of mince mixture and press it on to a hot skewer away from handles with wet hands so that mince will not stick to hands
  7. The mince mixture will immediately stick to the hot skewer
  8. Make almost 8-10 skewers and place the skewers on Bar B Que grill on high heat to seal all juices of mince within it.
  9. Keep rotating and oiling the skewers occasionally .
  10. When cooked, gently remove the kababs from the skewers and serve.
  11. These kebabs can be freezed at this time and on serving shellow fry these kebabs.
  12. If you don't have Bar B Que then you can shallow fry them in seekh kebab shape with or without using shahlic stick.

Method

  1. Wash and rinse rice for 3 times and soak in luke water 20 min.
  2. Mix milk powder and fresh cream in bowl and microwave for 4 min to thicken.
  3. After 4 min mix and microwave for another 2 min or till thickened.
  4. Khoya is ready
  5. Put 5 cups of water on stove and on boiling add lemon slices and cover the lid on boiling add rice till half cooked.
  6. Remove from stove and seperate rice from water and lemon slices.
  7. Take another pan and but butter and open green cardamen on a low flame till butter gets melt.
  8. Add half cup water and suger in it and wait till water gets minimum and thick syrup get ready.
  9. Add coconut, raisins, almounds and marmalade in it and heat for 3 min.
  10. Take a pan add half cooked rice suger syrup and tuti fruity and mix then pour colours seperatly on rice mixture.
  11. Cover the lid and put on for 20 min on low heat.
  12. Aftter 20 min add khoya and serve
