Ingredients

Ingredients for nihari masala powder

  • 1 Inch Cinnamon stick Whole
  • 4 Black Cardamom Whole
  • 2 inch nutmeg Whole
  • piece mace Whole
  • ½ tsp Cloves Whole
  • 5-7 bay leaves Whole
  • 4 black pepper long Whole
  • 2 Tsp black peppercorns Whole
  • 1 tsp cumin seeds Whole
  • 1 tsp fennel seeds powder
  • 1 tsp ginger powder powder
  • 1 tsp red chilli powder powder
  • ½ tsp Paprika powder powder
  • 1 tbsp Coriander powder powder

Ingredients for gravey

  • ½ kg beef bones with bone marrow
  • 1 kg beef shank meat
  • 4 tbsp nihari masala
  • 200 ml oil
  • 2 portion onion medium
  • 2 portion green chili
  • 2 tbsp ginger garlic paste
  • 1 tsp sugar
  • 2 lit water

water 1 cup+wheat flour ½cup as thickner

    Instructions

    • Dry roast nihari power whole ingredients in a saucepan and stir for 5 min on low flam. Grind them in grinder, in this powder form add other powder ingredients and mix. Set aside.

    • Take oil in pressure cooker and add chopped onion, saute it for 5 min untill onion get translucent, then add ginger garlic green chilli paste, saute for another 7 min. When mixture get brown colour add freshly prepared nihari powder.

    • Now add meaat and bones and roast for 5-10 minutes. Add little water if mixture get too dry.

    • now add water and closw the pressure cooker lid for 1 hour with pressure on(please follow the safety instructions of using preesure cooker). After 1 hour turnoff the flame and release pressure cooke and check if the meat gets tender enough and there should be at least one litter of water left.

    • .Remove extra fats and put it aside for saving later.

    • Make mixture of water and wheat flour and till all lumps mix.

    • Add this mixture to gravey and let it cook for 30 min on low flame, keep stairing otherwise it will get lumpy

    • After 30 the beef Nihari is ready garnish it with chopped green chillie in jullin cuttings of ginger and lemon. serve hot with roghani naan.
